If your project takes place in the summer months, then both cooking and eating outside is a possibility.  But what are you going to do if the project is started in the winter?  Maybe that isn’t even an option for you.  You can save yourself a great deal of aggravation, and increase the likelihood that your remodeling project will run as quickly and as smoothly as possible, with just a little thought and planning beforehand.
